Lying between the Society and Marquesas groups, the Tuamotu Archipelago is a huge arc of exclusively coral atolls. Atolls are formed by a ring of motus, small islets covered by coconut groves, some cultivated some left unattended. After 3 weeks at sea, we landed in the Marquesas last month. This archipelago of 12 mountainous islands is as remote a destination as you get: 6000 klm west of the Galapagos and south of Hawaii, the closest neighboring islands are the Tuamotus, 1000 klm to the west. Inspired by Colombian seafood dishes (coconut sauce) and red snapper from San Blas fishermen (off Coco Banderos Cays). Colombians traditionally deep fry individual fish, but I prefer to bake a bigger fish. Serve with plain rice and green vegetables. The sauce is so good it can be made on its own. Last month we spent 2 weeks in Canada for a skiing holiday in Whistler. The snow was pretty average, especially for Canadian standard, forcing us to climb as far up the mountain as possible to find good skiing.
